Broccoli, cabbage and salami pasta
Ingredients required for this pasta dish are:
Broccoli – 400 grams
White cabbage – 350 grams
Sliced salami – 200 grams
Red chili – 1 long
Anchovy fillets – 4
Garlic cloves – 2
Penne – 350 grams
Olive oil – 2 spoons, plus some extra for serving
Parsley – 1 bunch
Parmesan – 40 grams
Pine nuts – 80 grams
Lemon – 1
Preparation: Over high heat, in a saucepan, bring salted water to boil. Meanwhile finely shred cabbage and cut broccoli into florets. Chop salami into strips of size 1 cm wide. In half lengthwise, cut chili and remove seeds. Then thinly slice them. Finely cut anchovies and chop garlic. In boiled water, cook the pasta for 10 minutes. In the meantime, heat the oil in a frying pan over medium heat. Add chili, salami, garlic and anchovies. Cook till the fat from the salami is rendered; that will actually take about 3 minutes. Add the cabbage and toss it for a few minutes until it is wilted slightly. Take it off from the heat. Then add the pasta into the frying pan. Cook the broccoli in the pasta cooking water till it turns tender. In the meantime roughly chop parsley stems and leaves. Add the broccoli to the pasta along with parmesan, parsley and pine nuts. Over medium heat, place the pan and toss it for a few minutes till it is warmed up. Before serving this pasta dish, sprinkle little oil and lemon juice over the pasta. Spaghetti with bacon and prawns
The required ingredients are:
Softened unsalted butter – 60 grams
Crushed garlic cloves – 2
Lemon juice – 2 teaspoon
Chopped basil – ¼ c
Spaghetti – 400 grams
Olive oil – 1 spoon
Chopped bacon – 4
Roughly chopped green prawns – 500 grams
Preparation: In a bowl, mash the lemon, butter, garlic and basil using a fork. Keep it aside. In a large pan, cook pasta in boiling salted water as per the instructions given on the package. In the meantime, in a deep frying pan heat the oil over medium heat. Cook the bacon till it begins to be crispy; this will take about 5 minutes. Keep stirring the bacon continuously. Remove it and using a paper towel, drain it. Keep the pan back on the heat and melt some butter. Add prawns into it and stir for 3 minutes till they are ready.
